12 oz. ea. breakfast sausage links
english muffins, cut into 1-in. cubes
1/4 c
butter, melted

cheddar cheese, shredded
1 c
mozzarella cheese, shredded
1/2 c
onion, chopped
lg. eggs
2 c
salt & pepper to taste.
1/4 c
bacon bits
red or green pepper opt.

Directions Step-By-Step

Cook Sausage according to pkg. directions. Cool slightly; cut into 1/4-in. slices. In a greased 13x9 in baking dish, layer half the English muffin cubes & half the cooked sausage. Repeat layers~!
Drizzle with butter & top with the cheese, onion, (this is where I added some ham or bacon.)
In a lg. bowl, combine the eggs, milk, salt & pepper. Pour over casserole. Sprinkle with Bacon.
Cover & refrigerate overnite.

Remove from the refrigerator 30 min. before baking. Uncover and bake at 350 degrees for 45-50 min., or until knife inserted into the center comes out clean.
Let stand 5 min.

    This recipe sounded amazing but I have one problem, I am gluten free and cannot eat the English Muffin. I substituted hash brown potatoes in the recipe for the muffins. It took a while to bake but it turned out delicious.
