Another juicy tidbit from my grandmother, Margaret Whitehead. I get so many good ones from them, I just have to share.

Ingredients

9 inch unbaked pastry shell (pie crust)
12 slice
bacon, cooked and crumbled
1/2 c
shredded pepper jack or monterey jack cheese
1/2 c
shredded sharp cheddar cheese
1/3 c
finely chopped onion
4
eggs
2 c
whipping cream
3/4 tsp
salt
1/4 tsp
sugar
1/8 tsp
cayenne pepper

Directions Step-By-Step

Line unpricked pastry shell with a double thickness layer of heavy-duty aluminum foil. Bake in a preheated oven at 450 degrees for 5 minutes; remove foil and bake for 5 additional minutes. Remove from oven and let cool.

Reduce oven temp. to 425 degrees. Sprinkle bacon, cheeses, and onion over crust. Beat eggs with whipping cream and stir in spices. Pour over bacon mixture in shell. Bake for 15 minutes.

Reduce heat again down to 300 degrees. Bake 30 minutes longer or until knife inserted near center comes out clean.

I thought that too. I checked my grandmother's recipe and it's correct. I assumed that it was to compensate for the cheese component as well. If you make it, let me know how it turns out. Thanks

This looks great, but to double check... 2 C whipping cream seems like a lot for only 4 eggs?
