Breakfast Casserole

It's a hash brown casserole with a little bit of a twist. Nothing too scary, but just enough to make it perfect for breakfast or for dinner :)

1 lb
frozen hash browns, thawed
1 can(s)
cream of chicken soup
1 c
sour cream
1/2 c
2 1/4 c
(8 oz) grated cheddar cheese
1/4-1/2 c
diced bell peppers
1 medium
onion, diced
1/2 lb
thick cut bacon
1 pkg
(sleeve) ritz crackers, crushed
1 stick
plus 2 tbsp melted butter
salt and pepper, to taste


1In a large skillet saute onion and bacon until the bacon is just browned. Remove from heat and set aside.
2In a large mixing bowl combine: soup, sour cream, milk, 1 stick melted butter, 2 cups cheddar cheese, salt and pepper. Mix until blended.
3Add the bacon and onion to the mixing bowl. Mix in the bell peppers and hash browns until evenly combined.
4Place in a greased 13x9 inch baking dish and spread evenly. top with the remaining cheddar cheese and Ritz Crackers. Drizzle the remaining melted butter over the top.
5Bake at 350 degrees for 1 hour or until the top is a nice golden brown. Let cool for about 5 minutes before serving.
