Ingredients

large eggs
3 c
shredded cheese
12
hash brown potato patties, frozen (or 1 pkg frozen hash browns)
1 pkg
8 oz cream cheese
1 pkg
sliced ham
2 tsp
salt
1 tsp
black pepper
sour cream
green onions
tomatoes
salsa

Step-By-Step

1Pre-Heat over to 425

2spary a shallow baking dish or a deep cookie sheet with non-stick spray, and make a single layer of hash browns (I found the patties have a better flavor in the end but do NOT use tator tots)

3bake for 15-20 minutes until golden

4mix eggs, salt, pepper and cream cheese until well blended then mix in ham

5remove potatoes from oven, add 1/2 the cheese and bake 5 minutes or until melted

6remove potatoes and cheese from oven and cover evenly with egg and ham mixture, return to oven and bake 30-40 minutes or until middle is set and eggs are done.

7serve with remaining cheese, chopped tomatoes, onions, sour cream and salsa or whatever you prefer
