Ingredients

1 lb bacon diced
1 sweet onion chopped
6 eggs (lightly beaten)
4 c or 30 ounce bag frozen shredded hash browns ( thawed )
2 c shredded cheddar cheese
1 1/2 c cottage cheese
1 1/4 c swiss cheese (shredded)
salt and pepper to taste, or whatever seasoning you may like

In a large skillet, cook bacon and onion until bacon is crisp; drain.

In a bowl, combine the remaining ingredients; stir in bacon mixture.

Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.

Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.

At my husbands request,I usually add some jalapeno's to this, and some tabasco.

Can I omit the cottage cheese? If so, do I need to substitute another ingredient?

Donna, if I was to substitute I would probably use ricotta cheese. I have never made it without cottage. Hope this helps.
