I don't know the origin of this recipe. But, it is delicious ! Great for a holiday morning or a brunch! I recently added another cheese, for the top of the dish.

Ingredients For festive egg squares

  • 1 lb
    pork sausage, cooked and drained
  • 4 oz
    mushrooms, sliced
  • 2 md
    tomatoes, chopped
  • 1/2 c
    sliced green onions (with tops)
  • 1 1/2 tsp
    salt
  • 2 c
    shredded mozzarella cheese (about 8 ozs.)
  • 1 1/4 c
    buttermilk baking mix (diabetics try the low-carb baking mix)
  • 12 lg
    eggs
  • 1 c
    milk
  • 1/2 tsp
    pepper
  • 1/2 tsp
    dried oregano leaves
  • 1 c
    shredded, cheddar cheese

How To Make festive egg squares

    Preheat oven to 350°F. Grease a 9 x 13 x 2 inch pan.

    Layer cooked sausage, mushrooms, green onions, tomatoes, and cheese, in the prepared pan.

    Beat remaining ingredients; pour over sausage mixture. Cook, uncovered, about 20 minutes. Sprinkle the 1 cup of Cheddar cheese on top of dish. Continue cooking, until cheese is melted & eggs are set, about another 5-10 minutes. Don't burn. If eggs need at bit more cooking, cover loosely with aluminum foil, turn oven off, & allow to stay in oven another few minutes. Cut into twelve 3-inch squares.
