extra-virgin olive oil
1 small
onion, thinly sliced
1 lb
sweet potatoes, (about 2 medium), peeled and coarsely grated
1/4 tsp
sea salt
2/3 c
finely diced black forest ham, (4 ounces)
1/2 tsp


1Heat the oil in a large non stick skillet over medium high heat

2Add onion

3Saute, stirring often, until softened and lightly browned, 3 to 4 minutes.

4Turn the burner down to medium heat

5Add sweet potatoes and salt.

6Saute, stirring often, until the potatoes are tender, 4 to 5 minutes.

7Stir in ham and thyme;

8Saute, stirring, until the ham is heated through, about 1 minute more.
