Delicious!

This casserole can be made ahead, as so many others. Switch out the meats, if you don't like sausage. Make it your own. Enjoy!

Ingredients

1/2 lb
bulk, sausage - i used bob evans hot
1
tomato, chopped
1
onion, chopped
1 - 30 oz
bag, shredded hashbrowns - thawed
8
eggs
2 c
shredded, cheddar cheese
1/2 c
eggs, substitute
1 - 8 oz
sour cream
1 1/2 tsp
salt
1 tsp
pepper
1 tsp
ground mustard
1/2 tsp
dill
1/2 tsp
paprika

TOPPING

3/4 - 1 c
corn flakes, slightly crushed
2 - 3 Tbsp
melted, butter

Directions Step-By-Step

1
If baking the same day, preheat oven to 350 degree F.

Spray a 9 x 13 baking dish with non stick cooking spray.

In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
2
In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
3
In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
4
You can store this in the fridge covered overnight, or bake right away if desired.
5
Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
6
Remove casserole from oven long enough to sprinkle cornflakes over casserole.
7
Bake another 15 minutes or until knife inserted in center comes out clean.

Enjoy!
