Zucchini Bread

I always leave the skin on the zucchini. Gives the bread an interesting look.

Ingredients

1 c
white sugar
1 c
brown sugar
3
eggs beaten
1 c
vegetable oil
2 c
grated zucchini
3 Tbsp
vanilla
3 c
flour
1 tsp
salt
1 tsp
baking soda
3 tsp
cinnamon
1/4 tsp
baking powder
1/2 c
chopped nuts (optional)

Directions Step-By-Step

Combine sugar, oil & eggs - beat until blended

Add zucchini and vanilla

Sift flour with salt, soda, cinnamon & baking powder

Stir into creamed mixture, add nuts

Pour into two (2) well greased loaf pans

Bake @ 325 degrees for 1 hour
