Zucchini Bread

I got this recipe from a friend after I started growing zucchini plants in my garden. I would end up with zucchini coming out my EARS, so I make a lot of this bread every Summer!

Ingredients

3
eggs
2 c
sugar
1/2 c
vegetable oil
1/2 c
applesauce, unsweetened
2 c
zucchini, grated
3 c
flour
1 tsp
baking soda
3 tsp
cinnamon, ground
1 1/2 tsp
salt
2 Tbsp
vanilla extract
1/4 tsp
baking powder
1 c
chopped walnuts

Step-By-Step

1Beat eggs until foamy. Add sugar, oil and applesauce. Mix well.
2In a different bowl, combine flour, baking soda, cinnamon, salt and baking powder. Add to egg mixture and mix well.
3Add vanilla & walnuts and mix well.
4Stir in grated zucchini (if you have a dough hook on your mixer, it works well for this step)
5pour into 2 greased loaf pans and cook in a 350 oven for 50-55 minutes.
