  • FOR THE CRUST:
  • 2 c
    gluten free graham cracker crumbs
  • 1 Tbsp
    sugar
  • 4 Tbsp
    butter, melted
  • FOR THE CHEESECAKE
  • 3 pkg
    philadelphia cream cheese
  • 1/2 c
    sugar
  • 2 tsp
    vanilla extract
  • 3
    eggs
  • FOR THE MOCHA SWIRL
  • 6
    blocks semi sweet bakers chocolate
  • 1 Tbsp
    instant coffee powder
  • 2 tsp
    hot water
  • FOR THE SALTED CARAMEL SWIRLS
  • 1/4 c
    kraft caramel bites
  • 1
    pinch of sea salt + more for garnish if desired

How To Make salted caramel mocha cheesecake squares

    Preheat oven to 325. Line a 9x13 baking sheet with parchment paper, spray lightly with cooking spray and set aside. In a mixing bowl combine the graham cracker crumbs, sugar, and butter. Mix well and press into pan evenly. Using a stand mixer combine the softened cream cheese, sugar, and vanilla and mix until blended. Add in three eggs and beat until creamy. Pour cheesecake mixture into pan and spread evenly.

    For the Swirls:Slowly melt the Bakers Chocolate in the microwave, stirring often. When chocolate has melted combine the 2 teaspoons hot water with the espresso powder and pour in with chocolate. Stir well. Add chocolate in spoonfuls over cheesecake. Use a butter knife or other kitchen utensil to make swirls in your cheesecake. In a small bowl combine the caramel and the sea salt, slowly melt in the microwave. When melted drop in spoonfuls over the cheesecake. Using a knife, make swirls.

    Bake cheesecake for 40 minutes or until set. Let cool completely. Garnish with additional sea salt.
