Randall's Ordinary Cornbread

This is a little different than your typical cornbread. It is very moist and so delicious!It is from a small restaurant in Rhode Island that was built in the 1700’s. Food is still cooked over a wood fire in the original fireplace.

IMPORTANT: Let mix stand for 24 hours in refrigerator before baking.

Ingredients

1/2 c
sugar
1/4 c
oil
1 c
all purpose flour
3/4 tsp
baking powder
1/2 tsp
salt
1/2 c
white corn meal
1 c
milk
2
eggs

Step-By-Step

1Cream eggs and sugar.

2Add salt, milk and oil; Mix well.

3Slowly add cornmeal to mix;.

4Slowly add flour and baking powder; Mix well to incorporate all ingredients.

5IMPORTANT: Let mix stand for 24 hours in refrigerator before baking.

6Pour into 9-inch pie plate.

7Bake in 300 degree oven for 25-30 minutes.
