Pumpkin Date Bread

My mom LaVonne would bake this during the holiday season sharing it with friends. Best part was eating the bread still warm and the dates were soft, melting on your tongue like a piece of candy.

Ingredients

3 c
pumpkin, canned or cooked
1 c
vegetable oil (melted margarine is fine)
4 c
sugar (part brown sugar is fine)
5 c
flour
4 tsp
soda
1 tsp
salt
1 tsp
cinnamon
1/2 tsp
ginger and cloves
1 tsp
pumpkin pie spices optional
2 c
dates, chopped

Step-By-Step

1Mix pumpkin, oil, and sugar.

2Incorporate the flour, soda, salt, cinnamon, ginger,cloves, and pumpkin pie spice if desired.

3Add chopped dates and divide batter into 3 large loaf pans or six small loaf pans that have been greased.

4Bake in 350F. preheated oven for 50 minutes.
Large loaves should be done in center.
Check smaller loaves sooner.
