Ingredients

6 c flour
3 eggs
1 c pineapple juice
1 c water
3/4 c sugar
1/2 tsp ground ginger
1 tsp vanilla extract
2 pkg yeast
1 stick butter

Jo Anne's Notes:

A request has been made for the King's Hawaiian brand bread. There are many copycat recipes. Here is a one that has a pretty high rating.

 

Directions

In a medium bowl, beat eggs, add pineapple juice, water, sugar, ginger, vanilla and melted butter.

In a large mixing bowl, combine 3 cups of flour, egg mixture and stir well.

Sprinkle yeast, one package at a time, mix well.

Gradually add the remaining 3 cups of flour, the batter will be hard to mix with a spoon. You may have to use your hands, make sure that it is mixed well.

Put the dough in a bowl and cover with a cloth and place it in a warm area. Let it rest for about an hour.

Remove the dough from the bowl and knead in 1/2 cup of flour, knead about 10 times.

Divide the dough into 3 equal parts and place in a well greased round cake pans.

Cover and place in a warm area and let rise, about an hour.

Bake at 350 degrees for 25 to 30 minutes.

Yield: 3 loaves

Our Thankgiving was great...lots of food and enjoyed my great nephews. We were fewer in #'s this yr but we have a lot to be thankful for that is for sure!!

I have my yeast and when I went to look for my crushed pineapple I used it all on Thanksgiving. :0(

I made this recipe over the past weekend (using the bread machine "dough" setting, I'm too lazy to mix by hand!) and it was phenomenal! Be careful if you try your bread machine for this: the dough spilled over the top of the bread machine pan just a little--it rose quite well! I made 2 round loaves and a pan of dinner rolls. We had it with soup and salad and shared a loaf with our pastor. A huge hit, and one I'll definitely be making for the family Christmas dinner this year. Thank you so much for the recipe, I have always loved this bread!
