JAMIE'S PUMPKIN LOAF WITH A TWIST

Another fall recipe with pumpkin. I do love my pumpkin recipes. This one is made low calorie and you may change the way it is best for you.
I topped this one off with a layer of fudge and drizzled with carmel and chopped walnuts.
It is over the top good just imagine a scoop of ice cream or a hot cup of coffee with a warm slice.

Ingredients

PUMPKIN LOAF

2 c
almond flour
1/4 c
whole wheat flour or coconut flour
2 c
stevia or sugar
2 tsp
baking soda
1 1/2 tsp
baking powder
1/8 tsp
sea salt
1 tsp
nutmeg
1 tsp
ground cinnamon
1/2 c
olive oil, extra virgin plus 2 tsp. or vegetable oil
3
large eggs
1 c
chopped walnuts
1 Tbsp
pure vanilla extract
1 c
100% pure pumpkin, canned

FUDGE TOPPING

1 stick
butter
2 Tbsp
cocoa
1 Tbsp
vanilla extract
3 c
ten x sugar
4 Tbsp
heavy cream
any store bought bottle of carmel
chopped walnuts

Directions Step-By-Step

Mix all the ingredients together well and pour into a loaf pan.

Bake in a 350 degree oven for 45 minutes or until a tooth pick inserted is clean. Keep an eye on this so it is not too stiff and not too raw.

Turn out on a cake rack to cool.

FUDGE TOPPING

MELT THE STICK OF BUTTER IN A SAUCPAN OVER MEDIUM HEAT.
ADD IN THE COCOA STIR TIL DISSOVLED
ADD IN THE VANILLA
ADD IN THE SUGAR STIR AND ADD THE HEAVY CREAM

KEPP STIRRING TILL BECOMES THICK BUT DO NOT LET IT BURN ON BOTTOM. SIT IT DOWN IN A COLD POT OF WATER AND STIR REAL GOOD TIL COOLED

lAYER THE FUDGE TOPPING ON THE PUMPKIN LOAF SMOOTH IT WILL BECOME HARDEN LIKE FUDGE JUST NOT AS HARD.

DRIZZLE THE CARMEL OVER THE LOAF AND SPRINKLE THE WALNUTS OVER THE LOAF.

IF YOU ARE WATCHING YOUR DIET THIS CAN BE LEFT OUT AND EAT THE LOAF LIKE IT CAME OUT OF THE OVEN.
