I am always looking for creative ways to use the fresh vegetables as they come out of the garden. This chocolate bread is always a hit and no one ever guesses that there is zucchini in it.

Ingredients

DRY INGREDIENTS

2 1/2 c
flour
1 tsp
baking soda
1/2 tsp
cinnamon
4 Tbsp
ghirardelli chocolate unsweetened cocoa

CREAMED INGREDIENTS

1 1/4 c
sugar
1/2 c
softened margarine
1/2 c
canola oil
1 tsp
vanilla
2
eggs

ADD

1/2 c
buttermilk
1 c
pecans, chopped
3/4 c
mini semi-sweet chocolate chips
2 c
grated zucchini

Step-By-Step

1Mix all dry ingredients together in bowl.
2In separate bowl, cream sugar, margarine, oil, vanilla and eggs. Add dry ingredients.
3Mix in buttermilk, pecans, chocolate chips and zucchini.
4Pour into two greased and floured loaf pans. Cook at 325 degrees for approximately 50-60 minutes until toothpick comes out smooth. Remove from pans. Cool and slice.
