Family Favorite Pumpkin Bread

I thought I had the best pumpkin bread recipe until my Mom made hers. No contest, hers was the best. I have used her recipe since then. This Pumpkin Bread is super moist and does not last long!!

Ingredients

1 c
sugar
1/2 c
brown sugar, firmly packed
1/2 c
vegetable oil
1 c
canned pumpkin
2
eggs
2 c
all purpose flour
1/2 tsp
salt
1/2 tsp
cinnamon
1 tsp
baking soda
1/2 tsp
nutmeg
1/4 c
water

OPTIONAL:

1 c
raisins
1/2 c
nuts

Directions Step-By-Step

Preheat oven to 350. Generously coat a 9X5X3 loaf pan with oil or shortening.

Combine sugars, pumpkin, oil and eggs in a large bowl and mix until well-blended.

Add dry ingredients to this mixture and mix again until well-blended. Stir in water and mix again to blend well. Pour into prepared loaf pan

Bake at 350 for 65 to 75 minutes or until cake tester inserted in center comes out clean. Cool in pan for 10 minutes, then turn out on rack to cool completely.
