Delish...Banana Bread

I love making this treat all year long. It started out when I was a new mother and my husband and I couldn't afford gifts for everyone, so i got in the kitchen and made loaf after loaf to give as gifts...only, now 28 yrs later...its not for just Xmas anymore...I never make one loaf at a time, its alot more fun to share.

Ingredients

1 3/4 c
unsifted flour
1 Tbsp
baking powder
1/2 tsp
salt
3/4 c
sugar
1/2 c
margerine
2
eggs
1 c
mashed bananas

Directions Step-By-Step

Preheat oven to 350°F.
Grease 9 x 5 inch pan.

In one bowl mix flour, baking powder and salt thoroughly.

In a seperate bowl, mix sugar, margerine and eggs together until light and fluffy. Mix in bananas.
Add dry ingredients ; stir just until smooth

Pour Ito prepared pan. Bake until firmly set when lightly touched in center top, 50 to 60 minutes. (Bread should crack across top.)

For a firmer top crust: Cool on rack. Remove from pan after 10 min.
For a softer top crust ( my favorite way): Remove from pan immediately from oven and completely wrap in foil. Cool.

For variations: use any nut or dried fruit or add grated orange rinds to it.
