Cranberry Orange Bread

Obtained from Monica (lick the bowl good). I have found a way to make it Gluten Free and it is delicious! Try it!

Ingredients

2 c
flour
1 c
sugar
1 1/2 tsp
baking powder
1 tsp
salt
1/2 tsp
baking soda
3/4 c
orange juice
1 Tbsp
grated orange peel
2 Tbsp
shortening
1
egg well beaten
1 1/2 c
fresh or frozen cranberries
1 1/2 c
chopped nuts (optional)

Step-By-Step

1Preheat oven to 350ºF. Grease a 9 x 5-inch loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts, if using. Spread evenly in loaf pan.
2Bake for 55 minutes or until a toothpick inserted in the center comes out clean. Cool on a rack for 15 minutes. Remove from pan; cool completely. Wrap and store overnight. Makes 1 loaf (16 slices)
3I just tried this last night! I baked it using 1 cup white rice flour and 1 cup sweet sorghum flour instead of 2 cups reg flour. It turned out amazing! Try it out!
