Blueberry-Banana Bread

Found this recipe on Food Network. It is compliments of Giada De Laurenntis. Sounded so different, but so good. I dbled my batch and add pecans to the batter. I also used frozen thawed blueberries.

Ingredients

1 1/2 c
all-purpose flour
1 tsp
baking soda
1/2 tsp
baking powder
1 tsp
salt
1/2 tsp
ground cinnamon
1/2 tsp
ground nutmeg
1 c
sugar
1/2 c
vegetable oil
2 large
eggs, beaten
2 tsp
vanilla extract
2
banana's ripe, coarsley mashed to yield 3/4 cup
1 c
fresh blueberries (i used frozen, drained and thawed)

Directions Step-By-Step

Preheat oven to 350F. Place your oven rack in the center of your oven. Spray 6-mini loaf pans or a 9x5x3 loaf pan.

In medium bowl, combine flour baking. soda, baking powder, salt, cinnamon & nutmeg. Mix well.

In a lg mixing bowl beat, sugar, oil. eggs and vanilla till well blended. Add in bananas & blueberries. Add dry ingredients and stir just until blended.

Pour batter in to prepared pans. Bake until a toothpick comes out clean while checking the center. About 45 minutes for mini loaves and 1 hr for reg. loaf. Remove and allow to cool in pan about 1 hr. (Note- for mini pans I invert at 10 minutes and let cool on wire rack)
