Ingredients

1 3/4 c
all purpose flour
1 1/2 c
sugar
1 tsp
salt
2
eggs

ripe med. bananas, mashed 1 cup
1/2 c
vegetable oil
1/4 c
plus 1 tablespoon buttermilk
1 tsp
vanilla extract
1 c
chopped walnuts
1 tsp
baking soda

Step-By-Step

1In a large bowl, sift together flour, sugar, baking soda and salt.
2In another mixing bowl, combine eggs, banana, oil, buttermilk and vanilla; add to flour mixture. Stirring just until combined; fold in nuts.
3Pour into a greased 9 X 5 X 3-inch pan. Bake at 325 degrees for 1 hour and 20 minutes or until bread tests done. Cool on a wire rack.
