My mother was 98 years old when she passed away in April. This was one of her wonderful recipes. She was an outstanding cook and also baker. She taught me the love of both - and I treasure her recipes. This is one of them!
Cream shortening & sugar until fluffy. Add eggs and beat until creamy. Add flour witrh baking powder, baking soda, and salt, alternately with apple. Stir in cinnamon, vanilla, and nuts. Turn batter into 1 large or 2 small loaf pans (greased & floured). Bake at 325 degrees for 1 hour (large pan) or 50 minutes (small pans). Cool before slicing.
