This recipe is from a local (Rock Creek, B.C.) flour mill. The flour is stone ground in the old fashioned way. It is finely ground and is all-purpose. It keeps very well because of the way it is ground. They have a web site for "Heritage Mills". They also mill Rye flour. They get the grains from a local farm.

1Put into bread machine in this order and select a setting of 3 1/2 hours.

2Option: Use dough cycle. When cycle is complete, remove dough and shape. Place in an oiled loaf pan, cover and let rise until double in size.

3Preheat oven to 350-375 degrees. Bake for 40 to 45 minutes or until interior of loaf is 200 degrees on an instant read thermometer.
