Ingredients

all purpose flour
1 1/2 tsp
baking powder
1/4 tsp
baking soda
1/4 tsp
salt
2 tsp
ground cinnamon
1 large
egg, beaten
1 c
grated zucchini
1 1/4 c
sugar
2/3 c
milk
1/3 c
vegetable oil
1 tsp
vanilla extract
3/4 c
chopped pecans

Directions Step-By-Step

Combine dry ingredients in a mixing bowl; make a well in center.

Combine egg, zucchini, sugar, oil and vanilla, and 2/3 cup milk, mixing well; add to dry ingredients, stirring just until moistened. Stir in pecans.

Spoon into greased and floured muffin pans, filling 2/3 full. Bake at 400 degrees for 18 minutes.
