Ultimate Blueberry Muffins

The secret's in the sour cream, and you must follow the steps precisely. I hope you enjoy these as much as we do! Bakery quality at home :) These are not overly sweet and two cups of blueberries is most adequate, but feel free to load them up :)

Ingredients

4
eggs
2 c
white sugar + extra for tops
1 c
vegetable oil
1 tsp
vanilla extract
4 c
spooned and leveled flour
1 tsp
salt
1 tsp
baking soda
2 c
sour cream
2 or 3 c
fresh blueberries

Step-By-Step

1preheat oven to 400F
2beat eggs with mixer for 2 minutes, then gradually add white sugar until combined
3slowly add oil while continuing to beat until well combined
4now "stir" in vanilla extract
5in a seperate bowl combine flour, salt and baking soda
6alternating between flour mixture and sour cream, gradually "stir" them into egg mixture, combine well but not excessively
7gently fold in blueberries
8pour into prepared muffin tins (greased and floured or paper lined) filled to level
9sprinkle liberally with remaining extra sugar
10bake for 20-25 minutes until nicely browned and spring back when touched
