1Preheat oven to 375 degrees F.
2Over medium high heat olive oil and 4 tablespoons butter. Add bay leaf, vegetables and apples. Add salt, pepper and poultry seasoning.
3As the veggies start to soften add stuffing and stock mixing well.
4Spray large muffin tray with olive oil non stick spray. Over fill each muffin and shape with a large spoon. Bake 10 to 15 minutes so that the muffins are set. Serve hot.
