I made up this recipe for the Pillsbury Bake-Off a few years ago. Well,I didn't win the million dollars,but my family loves them.

Ingredients For sweet potato streusel muffins

1 1/2 c flour

1/2 c sugar
-
2 t. baking powder
-
1/2 t. salt

1/2 t. cinnamon
-
1/2 t. nutmeg
-
1/2 c milk
-
1/2 c sweet potatoes,cooked and mashed

1/4 c butter,melted
-
1 egg
- STREUSEL
-
1/4 c brown sugar
-
2 tablespoons flour
-
1 tablespoon butter,melted
-
1/3 c oatmeal,uncooked

1 t. vanilla
-
1/2 c chopped pecans
How To Make sweet potato streusel muffins

1Combine dry ingredients. In another bowl,stir milk,potatoes,butter and egg. Add to dry ingredients. Stir just till combined.Fill muffin cups 2/3 full. Combine streusel ingredients together. Top with streusel .Bake 350 degrees for 20-25 mins.
