Ingredients

1 1/2 c self rising flour
1/2 c oatmeal, uncooked (old fashion)
1/2 c regular sugar
1 egg
4 Tbsp butter (softened)
1 tsp vanilla
1 c milk
topping for muffins
1/3 c regular sugar
1 Tbsp cinnamon

I love anything with cinnamon!!!

 

Directions

Mix all dry ingredients together,flour,oats and 1/2 cup or sugar.

Mix together egg,butter,vanilla and milk

add wet mixture to dry mixture,mix until everything is mixed well.

line cupcake pan with liners or spray with Pam. Fill each cup with 2/3 the way full with batter. Bake at 400 degress for 12-14 minutes.

While baking mix the topping and once muffins are out of oven brush with melted butter and sprinkle with cinnamon topping.

I make these too April...they are a wonderful little muffin recipe.

These are no good. The texture is off--way too dense for a muffin. Sorry, but rejected by my whole family. Not a winner in this household

Wow!! These are sooo good!! I bought a bag of self-rising flour just to make these and I am so glad I did. I will make them over and over, again!!

I am glad you let me rethink about that! My mom suggested they might need a rising agent, and now I see that I used all-purpose flour instead of self-rising! Sorry to critique your recipe while I used the wrong flour. Let me know if I can remove my comment and I will.

Is the butter supposed to be melted when mixed with the milk & egg? It was hard to mix, so I put it in the microwave for 30 seconds. Still in oven, so not sure how they'll come out.

They came out okay - look & smell yummy. They're for a bake food sale tomorrow. I'll remember to soften the butter first next time.

I had my grandchildren over to bake and we baked these cupcakes Snickerdoodle Muffins I found them to be on the dry-crumbly side.I followed recipe to the T. I softened the butter but when mixed with the milk makes clumps.The children only liked a little bit..My husband NOT
