  • 1 1/2 c
    all-purpose flour
  • 1 c
    whole wheat flour
  • 1/2 c
    sugar
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 1/2 c
    low-fat buttermilk
  • 1 1/4 c
    chopped dried figs
  • 2 Tbsp
    vegetable oil
  • 1 Tbsp
    butter, melted
  • 1/2 tsp
    vanilla bean
  • 1 lg
    large egg
  • cooking spray
  • FOR THE MUFFIN TOPPING
  • 3/4 c
    packed dark brown sugar
  • 1/4 c
    quick-cooking oats
  • 1 Tbsp
    butter, melted

How To Make oat-topped fig muffins

    Preheat oven to 400º. Put all-purpose flour, wheat flour, sugar, baking powder, baking soda, and salt into your mixer/bowl. Stir together.

    Place buttermilk, figs, oil, vanilla, butter, and egg into a food processor. Process until well blended. Add the fig mixture into the flour mixture. Stir just until it is combined. Divide batter into 12 muffin cups coated with cooking spray.

    For Topping: Combine brown sugar, oats, and butter in a small bowl; toss with a fork until combined. Sprinkle oat mixture evenly over each muffin. Bake for about 18 minutes or until a wooden pick inserted into the center of the muffin comes out clean. Cool the muffins in the pan for about 5 minutes and then remove the muffins from the pans.
