Moist and Delicious Blueberry Muffins

i found this recipe on the back of a bag of sugar. you don't taste the oatmeal or the orange juice, but they make the muffins so moist, you won't want to stop eating at just one. i hope you will enjoy them as much as my family and friends.

Ingredients

1 c
uncooked oatmeal
1 c
orange juice
3 c
all purpose flour
4 tsp
baking powder
1 tsp
salt
1/2 tsp
baking soda
1 c
sugar
1 c
oil
3
eggs, slightly beaten
3 c
blueberries, rinsed

Directions Step-By-Step

Preheat at 375
line muffin tins

mix together the oatmeal and orange juice and set aside.

mix oil & eggs until blended, then fold in the oatmeal and orange juice mixture.

add the rest of the ingredients and mix until just combined, fold in blueberries(i actually use less then 3 cups).

fill muffin tins 3/4 full top with a mixture of cinnammon sugar and nuts if desired.

bake 20-25 minutes until done.
