Muffins are my favorite breakfast food. I am always trying to come up with ways to make them somewhat healthier. My grandkids love these.....and so do I.

Ingredients

1 1/2 c
special k cereal (any flavor)
1 c
buttermilk
1/4 c
hot water
1/4 c
canola oil
1 large
egg
1/4 c
brown sugar, firmly packed
1/4 c
sugar
1 large
ripe banana
1 1/4 c
flour
1 1/4 tsp
baking soda
1/4 tsp
salt
3/4 c
dried cranberries (blueberries are also good)

Step-By-Step

1Coarsley crush cereal.
Soak in hot water, buttermilk, canola oil for 5 minutes.
Add beaten egg.
Add both sugars.
Add mashed banana. Stir till well blended.
2Mix flour,baking soda, and salt together.
Add to cereal mixture, stir well.
Stir in cranberries or choice of fruit.
3Bake in greased muffin tins at 350 degrees for 19 minutes. Makes 12-14 muffins.
