Lemon Streusel Muffins
Wonderful addition to a brunch menu!
butter or margarine, softened
finely chopped nuts
Preheat oven to 375 degrees.
In a mixing bowl, cream butter and sugar.
In a separate bowl, combine flour, baking powder and salt; add to the creamed mixture alternately with lemon juice.
In a small bowl, beat egg whites until stiff; fold into batter.
Fill greased or paper-lined muffin cups 2/3 full.
Combine streusel ingredients; sprinkle over muffins.
Bake at 375 degrees for 15-20 minutes or until muffins test done.
Cool for 5 minutes before removing from pan.
