Buttermilk cornbread muffins offset by a hint of sugar. I love these with barbecue or chili to help offset the heat.

Ingredients For cornbread muffins

  • 3 c
    self-rising cornmeal
  • 1/2 c
    self-rising flour
  • 3 Tbsp
    sugar
  • 1 1/2 c
    milk
  • 1 1/2 c
    buttermilk
  • 1/2 c
    vegetable oil
  • 1/2 c
    butter, melted
  • 2 lg
    eggs, beaten

How To Make cornbread muffins

    Combine the cornmeal, flour, and sugar in a large bowl. Make a well in the center of the mixture.

    Combine the milk and remaining ingredients in another bowl. Add to the well in the dry ingredients. Stir just until moistened. Do not over stir.

    Spoon the batter into greased muffin tins, filling 3/4 full.

    Bake at 500 degrees F for 10 to 12 minutes. Remove from the pans immediately and enjoy!
