  • MUFFINS:
  • 2 3/4 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 1/2 tsp
    baking soda
  • 1/3 c
    shortening, chilled
  • 1/2 c
    buttermilk
  • 2 lg
    very ripe bananas, mashed
  • CINNAMON/SUGAR MIXTURE:
  • 1 c
    sugar
  • 1 1/2 Tbsp
    cinnamon, ground
  • 1 stick
    butter, melted
  • 3/4 c
    walnuts, chopped
  • GLAZE:
  • 1 1/2 c
    confectioners' sugar
  • 2 Tbsp
    milk
  • 1 tsp
    pure vanilla extract

How To Make banana nut monkey bread muffins

    Preheat oven to 400 degrees F. Grease a 12-cup muffin pan with cooking spray & set aside.

    In a medium bowl, stir together the flour, baking powder, salt & baking soda. Cut in the chilled shortening using a pastry cutter or 2 forks until the mixture resembles coarse meal. Add the mashed bananas & milk & stir together with a fork just until the dough comes together.

    Turn dough out onto a lightly floured surface & knead 8 times, adding a little bit of flour if the dough is still sticky. Roll dough into tsp-size balls.

    In a small bowl, stir together the granulated sugar & cinnamon. In a separate small bowl, melt the 1/2 C butter. Roll dough balls in melted butter, then roll in cinnamon-sugar. Place 4 - 6 dough balls in each muffin cup & add 1 tbsp nuts on top of each muffin.

    Bake 15 - 20 minutes, or until done & a toothpick inserted into the center of the muffins comes out clean. Remove from oven & allow to cool in pan for 5 minutes.

    Gently remove muffins from pan by running a knife around the edges & allow to cool completely before icing.

    When cool, make the icing by whisk together the confectioners' sugar, milk & vanilla. Drizzle over muffins using a fork. Serve warm.
