I made these for the first time Christmas morning and everybody just loved them. They are so moist and deee-lish!

Ingredients

CRUMB TOPPING

1/2 c
brown sugar, firmly packed
1/3 c
all-purpose flour
1/4 c
unsalted butter, softened
1 tsp
cinnamon

MUFFINS

1 1/2 c
brown sugar, firmly packed
2/3 c
canola oil (i just used reg. veg oil)
1
egg
1 1/2 tsp
vanilla
1 tsp
cinnamon
2 1/2 c
all purpose flour
1 tsp
baking soda
1/4 tsp
salt
1 c
buttermilk
3 c
diced firm tart apples (i used granny smith)

Directions Step-By-Step

Topping: In a small bowl toss together sugar, flour butter and cinnamon until crumbly; set aside.

Muffins: In a large bowl whisk together brown sugar, oil, egg, cinnamon, and vanilla until smooth. In a separate bowl, sift together flour, soda and salt. Stir oil mixture alternately with buttermilk. Fold in apples, mixing just until combined. Spoon into greased muffin cups filling 3/4 full. Sprinkle topping over evenly. Bake at 350ยบ for 25-30 mins or until golden brown and tops spring back.
