Apple-Cinnamon Muffins

These muffins are quick and easy to make. I like these with a cup of hot tea.

Ingredients

egg, beaten
3 Tbsp
sugar
1/4 c
milk
1/4 c
butter, melted
1 1/4 c
flour
1 1/2 tsp
baking powder
pinch of salt
1/2 tsp
cinnamon

apples, peeled, cored and finely chopped
3 Tbsp
raw sugar
1 tsp
cinnamon

Step-By-Step

1Preheat oven to 400°.
Line large muffin pan with paper liners.
2Mix egg, sugar, milk and melted butter in large bowl.
3Sift in the flour, baking powder, salt and cinnamon.
4Add the chopped apple and mix coarsely.
(Tip: Do not over mix the muffin mixture - it should be lumpy.)
5Spoon the miffin batter into the paper-lined muffin pan.
6Make topping mix by mixing raw sugar with remaining 1 teaspoon of cinnamon.
Sprinkle over the uncooked muffins.
7Bake for 30-35 minutes, until golden brown.
8Transfer to wire rack to cool.
