Gluten Free Blender Pancakes

I'm a family and couples Therapist who besides Psychology, loves to cook for a crowed as well just for my family. Since a long time family members are dealing with some food intolerance, than I'm always looking for recipes can attend their needs. Ingredients

1 c
buttermilk/ or substitute

eggs
1 Tbsp
cooking oil
2 Tbsp
brown sugar or any cooking sweetener
1/2 tsp
baking soda
1 tsp
baking powder
1/2 c
rice flour
1/2 c
potato flour
1/4 c
cornmeal

Directions Step-By-Step

Place milk, eggs and oil in blender.

Blend at low speed.

Add sugar or sweetener and dry ingredients.

Pour 6" rounds into greased skillet or non-stick pan.

Flip when bubbles appear throughout and edge of cake looks dull.

Add more milk for thinner pancakes or more flour for thicker ones.

You can add any fresh or frozen fruit or nuts to the dough
