It was the first time I was hosting my family's Christmas morning festivities and I wanted to make something special. This is a conglomeration of several recipes including, gingerbread, waffles, pancakes, bread, and a few glimpses of holiday ideas I caught from various food channels. I made them a few times with a tweak here and there until I was VERY happy with the result. In the process I found that they are almost as good frozen then reheated (though they loose a bit of their fluffiness). I also learned that my 2 year old LOVED them! This is a recipe that everyone can add their own twist to make it their own. Enjoy!
Heat syrup over low/ medium. Poke cloves into orange peel and drop into syrup. Cook while preparing pancakes.
Whisk together dry ingredients and set aside. Beat the egg in a separate bowl with the vanilla and molasses until smooth. Whisk in water. Stir the molasses mixture into the dry ingredients until combined.
Spray griddle with non-stick cooking spray and heat to medium. Pour mix to desired size cakes and flip when bubbles form and edges are dry.
