This is so good. Keep it refrigerated or it will get soggy. It's like a cake more than a bread. YUM

Ingredients

1 c
pumpkin
2 c
sugar
3/4 c
brown sugar
4 large
whites
1/2 c
heavy cream
1/4 c
canola oil
2 c
flour
2 tsp
baking powder
2 tsp
pumpkin pie spice
1/4 tsp
salt
8 oz
cream cheese softened
1/2 tsp
cinnamon

Step-By-Step

1Preheat oven to 350 degrees
2Mix pumpkin, 1 cup sugar,brown sugar, 3 eggs whites, cream, and oil together. Add flour, baking powder, pumpkin pie spice, and salt.
3In separate bowl beat cream cheese with the other 1 cup of sugar, the other 1 egg white, and the cinnamon.
4Grease a loaf pan. Pour half the pumpkin mixture in the bottom. Top with the cream cheese and then the other half of pumpkin mixture.
5Bake for 1 hour
