I wanted to make banana bread one day and I couldn't find my go to recipe. I come up with this by combining a couple of recipes. This is the best! I pleasantly surprised myself and my family and friends love it as well!

Ingredients

1 stick
butter, room temperature
3/4 c
brown sugar, firmly packed
2 large
eggs - room temperature
1/3 c
vanilla greek yougart or honey vanilla flavored (1 single serve cup)
2 c
mashed, ripe bananas ( 4 very large - i freeze mine in the peel. pull out of the freezer and thaw just until softened than add to your recipe.)
1 1/2 tsp
vanilla extract
2 c
ap flour
1 tsp
baking soda
1/4 tsp
salt
1/2 tsp
cinnamon
1/2 c
chopped walnuts (optional)

Directions Step-By-Step

Preheat oven to 350 degrees. Lightly grease 2 loaf pans (I used glass).

Cream together butter and brown sugar for about 3 minutes. Add eggs one at a time beating well after each addition. Mix in the yougart, mashed bananas and vanilla for 2 minutes. In another bowl combine dry ingredients except the walnuts. Using a spatula gradually fold the dry ingredients into the wet only until there are no more flour pockets. Do not over mix. Fold in Walnuts.

Spoon batter evenly in two loaf pans and bake 30 to 45 minutes or until a toothpick in the center comes out clean.
