Ingredients For baked boston brown bread

  • 1 pkg
    12 ounces corn muffin mix
  • 1/4 c
    unsweetened cocoa
  • 3 Tbsp
    flour
  • 2 Tbsp
    packed light brown sugar
  • 1 1/4 c
    milk
  • 3/4 c
    chopped nuts
  • 3/4 c
    raisins
  • 1/4 c
    dark corn syrup
  • 1
    egg, beaten

How To Make baked boston brown bread

    Combine corn muffin mix, cocoa, flour, and brown sugar in large mixing bowl. Add milk, stirring until dry ingredients are moistened; let stand 5 minutes. Stir in nuts, raisins, corn syrup, and egg.

    Divide batter equally among four well greased miniature loaf pans (3 1/4x5 3/4x2 1/4 inches). Bake at 350 for 35-40 minutes or until cake tester comes out clean. Cool 5 minutes; remove from pans. Cool slightly. Slice; serve warm with butter or cream cheese.

    Variation, Baked Boston Brown Muffins: Fill greased muffin cups (2 1/2 inches in diameter) 2/3 full with batter. Bake at 350 for 12-15 minutes or until cake tester comes out clean. Cool in pans 5 minutes; serve warm.
