Ingredients For vanilla pear muffins

1 cwhole wheat flour

1/2 call-purpose flour or unbleached all-purpose flour

3/4 cwhite sugar

1 1/2 tspbaking powder

1/2 tspsalt
-
1/2 clow-fat vanilla yogurt
-
1/2 ccanola oil
-
1 lgegg
-
2 tspvanilla extract
-
1 mdripe but firm pear (like bosc*), peeled, cored, and diced

1/2 cchopped pecans

*a softer pear will tend to "melt" into the batter.
How To Make vanilla pear muffins

1Preheat oven to 450°F. Grease or line 12 muffin cups with paper liners.

2Whisk first 5 ingredients together, in a bowl. Dredge nuts in flour. Whisk next 4 items together, in a separate bowl, until smooth. Stir yogurt mixture, into flour mixture, until batter is just mixed; fold in pear and pecans. Spoon batter into the prepared muffin cups.

3Place muffin tin in oven; reduce heat to 350°F. Bake, until tops of muffins are browned and tests clean with toothpick in center, about 20-25 minutes. Cool in pan for 5 minutes, before transferring to wire rack to cool completely.

4Store in airtight container up to 3 days, in refrigerator. These muffins, do not freeze well.
