Ingredients For vanilla pear muffins

  • 1 c
    whole wheat flour
  • 1/2 c
    all-purpose flour or unbleached all-purpose flour
  • 3/4 c
    white sugar
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    low-fat vanilla yogurt
  • 1/2 c
    canola oil
  • 1 lg
    egg
  • 2 tsp
    vanilla extract
  • 1 md
    ripe but firm pear (like bosc*), peeled, cored, and diced
  • 1/2 c
    chopped pecans
  • *a softer pear will tend to "melt" into the batter.

How To Make vanilla pear muffins

    Preheat oven to 450°F. Grease or line 12 muffin cups with paper liners.

    Whisk first 5 ingredients together, in a bowl. Dredge nuts in flour. Whisk next 4 items together, in a separate bowl, until smooth. Stir yogurt mixture, into flour mixture, until batter is just mixed; fold in pear and pecans. Spoon batter into the prepared muffin cups.

    Place muffin tin in oven; reduce heat to 350°F. Bake, until tops of muffins are browned and tests clean with toothpick in center, about 20-25 minutes. Cool in pan for 5 minutes, before transferring to wire rack to cool completely.

    Store in airtight container up to 3 days, in refrigerator. These muffins, do not freeze well.
