~ Sweet Lil Cheesy Corn Muffins ~
I made these savory, cheesy, sweet lil muffins to go with dinner tonight. The kids love them as they're bite sized and cute. A great way to portion, if watching your calories.
- 1/4 c
- each - sour cream & vegetable oil
- little less than 1/2 cup sugar
- 1 c
- cream style corn
- 1 c
- corn meal
- 1/2 c
- 1 Tbsp
- baking powder
- 1/2 tsp
- 1/2 - 2/3 c
- shredded, cheddar cheese
1Preheat oven to 325 degree F.
Spray a mini muffin tin with nonstick cooking spray. Set aside.
In a Medium bowl, whisk together the oil, sour cream, corn, sugar and egg. Stir in the corn meal, flour, baking powder, salt and cheese.
2Using a tablespoon evenly add batter to each muffin hole. Bake for 12 - 15 minutes or until pick comes out clean.
Note* I sprinkle some with red pepper flakes. Optional!
