Ingredients

1 1/4 c
canola oil
2 c
sugar
2 large
eggs
2 c
shredded carrots
8 oz
can crushed pineapple undrained
3 c
flour
1 tsp
each baking soda, salt, and vanilla
1 Tbsp
cinnamon
1 c
dried cherries
1 c
chopped pecans

Step-By-Step

1beat oil, sugar and eggs well. Add in carrots and pineapple. Add dry ingredients. Then stir in vanilla, cherries and nuts.
2Grease two muffin pans. Fill 3/4 full. Bake at 350 degrees for about 20 to 30 minutes.
