Preheat oven to 350 degrees. Line muffin tin with papers.
Combine carrots, apple, raisins, walnuts and coconut; set aside.
With electric mixer beat butter, sugars, eggs and vanilla.
Combine flour, bran, baking soda and cinnamon. Add to creamed mixture and combine. Add carrot mixture and lightly mix.
Spoon into 24 muffin cups. Bake 25 minutes. Let cool in pan 30 minutes.
