Ingredients

2 c
all purpose flour
2 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
nut meg
1/2 tsp
salt
1 stick
butter, melted
1 c
sugar
2
eggs, lightly beaten
2
overripe bananas, mashed
1/4 c
milk
1 tsp
vanilla extract
1/2 c
pecan chips

Step-By-Step

1Preheat oven to 375.
2Coat muffin tin heavily with cooking spray or line with paper liners.
3In a separate bowl, wisk together with a fork or heavy wire wisk, mashed bananas, melted butter, sugar, eggs, milk and vanilla together until well blended.
4Gently stir in pecan chips into banana mixture.
5Add wet ingredients into dry ingredients and mix thoroughly.
6Spoon batter into a muffin tin, 3/4 full.
7Bake muffins 20-25 minutes or until a toothpick comes out clean.
