This breakfast is easy with ingredients most of us have on hand. It's hearty and comforting with some CALORIES. So this isn't something I make very often; maybe once or twice a year. Flour 4-slices of bacon before frying (serves 2-people). This keeps spatter to minimum and creates nice crust on bacon. Add 1/4-cup flour to bacon drippings; add the pepper and salt to flour mixture stirring quickly; do not burn roux; add milk stirring briskly creating a wonderful bacon gravy; add milk to desired consistency; cook on low stirring frequently until completing next step.
Scramble eggs, toast and butter English muffins. Top open-faced muffins with drizzle of your favorite honey.
Lay muffins open-faced on 2-plates. (I warm the plates in micro for about 10-seconds). Divide scrambled eggs onto each muffin; top the eggs with the bacon slices, (which I broke in half); top each muffin/eggs/bacon with the bacon gravy.
