1 1/4 cwhole wheat flour

1 coat bran
-
1/2 cbrown sugar, firmly packed

2 1/2 tspbaking powder

1/4 tspbaking soda

1/4 tspsalt

1/4 tspground nutmeg

1/4 tspground cinnamon

1 cbuttermilk
-
2egg whites
-
2 Tbspcooking oil
-
3/4 cshredded, peeled apple

nonstick spray coating
How To Make apple and oat bran muffins

1In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon. Set aside.

2In a small bowl, combine buttermilk, egg whites, and oil. Add to dry ingredients; stir just until moistened. Stir in shredded apple. Store batter, tightly covered, in the refrigerator for up to 5 days.

3To bake, spray muffin cups with nonstick spray coating. Spoon about 1/4 cup batter into each muffin cup. Bake in a 375 oven for 18 to 20 minutes or until a toothpick inserted near the center comes out clean.
