Chicken & Pesto -Stuffed Biscuits!

- 8 "grands style biscuits"
- 1/4 c soft goat cheese
- 1/4 c store bought pesto
- 1/4 c shredded cooked chicken or meat of choice
1Preheat oven to 350F
Remove biscuits from pkg. and flatten to 4-inch circles.
2Combine pesto and goat cheese and spread about 1 tsp. into center of each biscuit.
Place some meat mixture into the center as well.
3Fold the edge over to form a half moon and pinch the edges together firmly.
Pierce the top of each with the point of a paring knife 2-3 time.
Opt. brush tops with a little egg wash.
4Place on a baking sheet and bake for 25 minutes or until golden brown.
Here are some more suggestions:
Tuna,some spicy mayo and some sharp cheddar.
Roasted veggies and feta cheese
Shredded roast beef, BBQ sauce and some provolone cheese.
The possibilities are endless. :-)
You could have a bunch of ingredients out and have a "Pocket Party".
