MMMmm! Thanks to the SOUTH!
Nothing like a good ole Southern Recipe of
CAT HEAD BISQUITS
(with gravy)for breakfast...
Or when ever the taste for it, hits ya!....LOL
These are big, and are never rolled and cut out with a bisquit cutter, or an upside down glass like me granny did!!

Ingredients

2-1/2 c
flour
3/4 tsp
salt
1/2 tsp
baking soda
1 tsp
baking powder
1 c
buttermilk
4-1/2 Tbsp
shortening,.. like yellow crisco

Directions Step-By-Step

Pre-heat oven 450F..
In a medium size bowl, mix flour,salt, baking soda, and baking powder together.
Add shortening, and use a pastry cutter,unill a crumbly mixture like oatmeal is produced.
Add the buttermilk to th center of the flour mixture.
Mix with a spoon until the dough is slightly lumpy, and looks shaggy.
Then with your hands, knead the dough in the bowl 3-4 times. It helps if you flour your hands, a little.

To make cat head bisquits (the size of a cats head) pinch off a ball of dough 2-1/2 -3 inches, and pat with your hands into a thick bisquit.
Put heads into a cast iron skillet (4) even a pie plate with any leftovers.
Or all on a cookie sheet. etc. even a pie plate..
My skillet held only 4 heads...so 2 went into a pie plate.

Bake for 15 minutes..until golden brown.
Serve with butter, jam, honey, apple butter,
or like I do...
serve your favorite recipe for sausage gravy ..MMMMMMmmm!!
